THE COFFEE

this is a superb coffee, from a well awarded coffee growing family. Coupled with its Carbonic Maceration process, this coffee delivers big, pleasing flavours to every cup. 

FARM/PRODUCER

Located atop the Tecapa volcano, Los Pirineos is a family-owned coffee farm with a diverse collection of over 80 varietals. Their innovative processing techniques and prime location have earned them acclaim in the coffee industry.

For over 130 years, the Baraona family has been cultivating coffee at this farm, using original plants and shade trees imported from Antigua, Guatemala. The farm boasts the largest private selection in El Salvador. The main varietals grown here include bourbon, typica, pacas, and pacamara.

El Salvador's Los Pirineos has garnered immense acclaim, from exporters, buyers, and roasters alike.  for its top-notch, flavourful coffees. The meticulous team and family at Los Pirineos prioritise the up- keep of their equipment and specialise in advanced processing, de-pulping, and drying methods, resulting in consistently exceptional quality from start to finish.

THE PROCESS

The carbonic maceration process, takes well established methods used in wine making and applies it to coffee. During this process the harvested coffee is placed in sealed tanks where the temperature and humidity are controlled. These tanks are then flushed with carbon dioxide to remove all oxygen from the tank. After fermentation, the coffee is dried on raised beds for 12-18 days before being stored and milled.
