The name Wilton Benitez is synonymous with quality. A former chemical engineer, he has brought his skills to coffee processing. Over the past years, he has gained a reputation worldwide for producing exceptional coffee. His processing facilities, which resemble laboratories, provide a convenient way to analyse the chemical composition of his products.

Granja Paraiso 92 is the smallest of the three of Wilton’s farms, at just 5 hectares. 

Granja Paraíso 92, however is an all-in-one coffee farm, microbiology/quality-control laboratory, processing plant, and spiritual homestead for the coffee-producing Benitez family.

The Benitez family have named their farm ‘paradise’ which represents their commitment to producing only coffees that score 92 or above, the farm is strategically located on the flat terrain of Piendamo in Colombia’s Cauca region.

Granja Paraíso 92 combines excellent agronomy practices with innovative processing techniques, making its coffee exceptional.

The red bourbon lot is sourced from neighbouring farms surrounding Granja Paraiso, which Wilton owns and manages. 

 THE PROCESS

This is a washed process coffee. During this method the ripe coffee cherries are harvested, de-pulped, and washed, removing all fruit pulp surrounding the coffee beans. As with all coffee from Wilton Benitez, he has applied precise techniques during the processing stage, drawing out the process by controlling the level of fermentation applied to the coffee. This brings forward bigger flavours to the cup, which we love. 

WHY WE LIKE IT

We love this coffee for all that it is. It's a popular varietal, controlled-washed processing, and coffee growing region and farm, which all contribute to its superior taste. It's fruity and floral, with a balanced sweetness that fills every cup with bright flavours and a juicy body.
