THE COFFEE

This is a special coffee due to its unique native  Ethiopian Yirgacheffe varietal, grown in Colombia by Luis Anibal. The Yirgacheffe varietal brings an abundance of florals and brightness to each cup, and flavour enhanced even more so by the extended fermentation process. 

FARM/PRODUCER

Luis Anibal Calderon is one of the finest producers in Colombia. Luis, as a second-generation coffee farmer has been working his land for over 20years. In 2015 Luis made the brave decision to convert his entire estate to exotic coffee varietals, including Gesha, Tabi, Red and Yellow bourbon, Pink Bourbon, Wush Wush and more. It has taken some time and hard work to estabish his crops, but This Yirgacheffe varietal (commonly only grown in Ethiopia) is a perfect example of his work and dedication. 

THE PROCESS

Alongside his commitment to exotic varietals, Luis is also committed to exploring different processing methods to extend the flavours of his most desirable micro-lots. 

This current lot we are roasting has under-gone a natural, double extended-fermentation (EF2) process. Luis and his team have harvested the ripe Yirgacheffe cherries, placed them into fermentation tanks to ferment for 24hrs. After this they are moved to grain pro bags to ferment for a further 50hrs at a tempreture below 22c. They are now removed to begin the drying process. 

During this fermentation time the mico-organisums  break down the sugars, and other compounds. The extended fermentation results in producing coffees with concentrated and intensifies flavours.

Fermentation also increases the sweetness and red fruit flavours found in these coffees. 

WHY WE LIKE IT

We chose this coffee due to its unique varietal and the unlikeliness of it being grown in Colombia. But on top of that, it has been produced by one of Colombias best mirco-lot producers, and its extended processing has ensured this coffee to be packed full of the fruity sweet flavours that we adore.
