This single origin coffee comes from family owned farm Finca Los Nogales, situated in Bruselas Pitalito Colombia. This coffee has been exposed to a unique processing method where the coffee cherries are picked at optimal ripeness, heat shocked by being submersed into 80 degrees hot water, washed and skinned. The outer skins are then added to back into the fermentation tanks, along with the washed beans, for 114 hours. This process allows healthy bacteria to ferment the coffee beans, through a  anaerobic process, allowing the coffee to adopt wildly fruity and sweet flavours during this process. 

The coffee is then washed and sun-dried for almost a month readying the coffee for export. 

The result of this process is a unique coffee that has complex flavours. You can expect flavours of ripe red fruits, and chocolate richness.
