THE COFFEE
We are so pleased to showcase this lovely coffee from a new supplier we have recently connected with. With extended natural processing this coffee is full of smooth stonefruit notes and gentle sweetness.
FARM/PRODUCER
Tatama National Natural Park is a protected area in Colombia, located in the heart of the central coffee-growing region of Risaralda. This region is recognized as a “Coffee Cultural Landscape” by UNESCO, a designation it received in 2011. The people of Risaralda are known for their spirit of entrepreneurship, courage, enthusiasm, and warmth.
The park itself covers over 50,000 hectares of subtropical rainforest and paramo habitat, serving as a point of pride for the residents of Risaralda.
THE PROCESS
The extended natural processing method applied by producer Hernando Tapasco, has enhanced the coffees depth and body, whilst highlighting the unique terroir of the region. The coffee cherries are shade dried whole, for an extended amount of time, allowing slow development of deepened flavours they have found this a successful way to get a coffee with good body, more fruitiness character and greater diversity of red fruits.
WHY WE LIKE IT
Its always nice to connect with new suppliers, to explore and discover new coffees. This lot comes to us from a new region of Colombia, from a new producer with connections to family owned farms, and we couldn't be happier with how its tasting. Being a big fruity sweet coffee, filter brews are highlighting the processing of this coffee, and espresso coffees are sweet with a pleasing body.
