THE COFFEE

This coffee is characterised by its fruit-forward profile, showcasing sweetness and body. The finish is clean and distinctly floral, enhanced by delightful hints of red stone fruits.

FARM/PRODUCER

This coffee is grown in the San Vicente municipality of Colombia, located just 10 km from La Plata, Huila.

The San Vicente region is enriched with volcanic ash soils providing fertile ground that is highly beneficial for coffee cultivation. This nutrient-rich soil, along with careful management practices, supports the growth of premium coffee varieties such as Castillo, Caturra.  These cultivars are well-suited to the local conditions and significantly contribute to the distinctive taste profiles that make this coffee unique.

This coffee is grown by the members of the OCCICAFE Cooperative, situated in the San Vicente.  These smallholder farmers are dedicated to producing high-quality seasonal coffee.

THE PROCESS

This is a washed process coffee. During this method the ripe coffee cherries are harvested, de-pulped, and washed, removing all fruit pulp surrounding the coffee beans. The coffee is then placed on sun-beds to dry-out the coffee beans, until they reach the optimal moisture content of 11%. 'Washed Coffees' are know to have clean and balanced characteristics, this process often promotes higher acidy in coffee, and showcases the coffees varietal, origin and the environmental growing conditions from which it is formed. Removing all the pulp surrounding the coffee, before it dries, eliminates the chances of fermentation occurring which can alter the coffees original organic structure.

The crisp taste of these Colombia beans allows us to appreciate its brighter acidity, and stone fruit sweetness which is a pleasure for our filter brews, and zesty-tasting espresso.
