THE COFFEE
This coffee has a lovely subtle orange note, followed by smooth chocolate and toffee flavours, a easily enjoyed coffee from Peru.
FARM/PRODUCER
This coffee is grown by the Cortez family, in San Ignacio a coffee growing region of Cajamarca. This city of Peru is know for its coffee, honey and natural forests.
The Cortez family are passionate coffee farmers, with several farms all within Cajamarca. The lot we have for you today is grown on their plantation La Cima, which sits at a preferable high-altitude, surrounded by the beautiful San Ignacio landscape, boarded by Pine and Guama trees, which help to shade the cherries as they ripen slowly, enriching the coffees flavour.
THE PROCESS
The Cortez family preference a washed coffee process. During this method the ripe coffee cherries are harvested, de-pulped, and washed, removing all fruit pulp surrounding the coffee beans. The coffee is then placed on sun-beds, or machinical dryers to dry-out the coffee beans, until they reach the optimal moisture content of 11%.
'Washed Coffees' are know to have clean and balanced characteristics, this process often promotes higher acidy in coffee, and showcases the coffees varietal, origin and the environmental growing conditions from which it is formed. Removing all the pulp surrounding the coffee, before it dries, eliminates the chances of fermentation occurring which can alter the coffees original organic structure.
WHY WE LIKE IT
It's been a while since we've featured a single origin from Peru, and we were pleased to find this one. La Cima has a crisp taste enhanced by its brighter acidity, which reveals a gentle note of orange sweetness. This profile is delightful for filter brews and zesty-tasting espresso. Additionally, the undertones of toffee and smooth chocolate create a beautifully rounded finish in each cup.
