THE COFFEE

This is a special coffee, part of a reserve collection of crops produced by Colombian farmers Elias and Shady Bayter. Together these brothers have worked tirelessly over the past years, experimenting with process and planting a vast collection of coffee varietals upon their land. This crop is our favourite of the season. 

It's fruity, complex with a full-bodied cup of juiciness with a boozy spice. 

FARM/PRODUCER

In 1995, the Bayter Family began their venture into agriculture at El Vergel farm. While avocados were their primary focus, a decline in prices in 2006 prompted them to diversify. With the addition of coffee varieties such as catimore, red, and yellow caturra, they quickly established themselves as a major player in the coffee industry. Under the guidance of coffee expert Miguel Jimenez, they expanded into specialty coffee varieties in 2016, solidifying their status as a powerhouse in the world of coffee.

THE PROCESS

This variety of Yellow Bourbon coffee has undergone Natural processing with a unique twist - a brisk 48-hour fermentation to achieve a well-balanced fruity flavour and controlled sweetness. The journey continues as the beans go through an 8-day sun-drying process in mechanical silos, absorbing warmth and developing a toasty profile. After sunbathing, the beans are stabilised for 35 days in Grain Pro bags before being milled. This carefully crafted coffee journey guarantees a distinct and flavourful experience in every cup.

WHY WE LIKE IT

We love this coffee for all that it is. Its highly regarded varietal, enhanced Natural  processing, and coffee growing region all contribute to its superior taste. It's fruity and juicy with a slight hint of funkiness, which elevates the cup and brings forward the spicy yellow-fruit flavours that exists within the cup when brewed for both filter and espresso coffee.
